Strawberry Cake in a Blender

A quick and easy strawberry cake made entirely in the blender — fruity, fluffy, and perfect for any occasion!

Ingredients
  

  • 200 g strawberries about 1¼ cups, chopped
  • 250 g all-purpose flour 2 cups
  • 3 eggs
  • 200 g sugar 1 cup
  • 16 g baking powder 1 tbsp
  • 80 ml vegetable oil ⅓ cup
  • tsp vanilla extract
  • Orange zest optional, about 1 tsp, or to taste

Equipment

  • 1 7-inch round cake pan

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the washed strawberries, sugar, oil, eggs, vanilla extract, and orange zest if using. Blend until smooth.
  3. Gradually sift the flour and baking powder into the blender. Use a spatula to gently fold the dry ingredients in, mixing just until incorporated. Avoid over-blending to keep the cake light.
  4. Line a 7-inch round cake pan with parchment paper.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes.
  8. Carefully transfer to a wire rack or plate to cool completely.
  9. Once cool, dust with icing sugar or decorate with your favorite icing.
