Mango Chia Pudding

Creamy, tropical mango chia pudding blended with coconut and almond milk, lightly sweetened, and packed with nutritious chia seeds. An easy make-ahead breakfast or snack.

Ingredients
  

  • 60 g chia seeds 1/4 cup
  • 160 ml canned coconut milk 2/3 cup
  • 80 ml almond milk 1/3 cup
  • 1.5 –2 tbsp maple syrup or honey to taste
  • 1 ripe mango peeled and chopped (approx. 180 g or 1 cup)
  • 2 tbsp cashews optional, roughly chopped or whole

Method
 

  1. In a blender, combine coconut milk, almond milk, maple syrup or honey, chopped mango, and cashews. Blend until smooth and creamy.
  2. Pour the mixture into a bowl or jar and stir in the chia seeds until evenly distributed.
  3. Cover and refrigerate for at least 4 hours or overnight, until thickened.
  4. Before serving, optionally top with a layer of yogurt and decorate with extra mango chunks.
