Macerated Strawberries

Sweet, tender, and full of citrusy brightness, these macerated strawberries are the perfect topping for anything from pancakes to pound cake — or simply enjoyed by the spoonful.

Ingredients
  

  • 350 g strawberries chopped (2 ½ cups)
  • 20 g sugar 1 ½ tbsp
  • 15 ml lemon juice 1 tbsp
  • 15 ml mandarin juice 1 tbsp
  • Zest of ½ lemon
  • Zest of ½ mandarin

Method
 

  1. In a bowl, combine the chopped strawberries with sugar.
  2. Add lemon juice, mandarin juice, and the lemon and mandarin zest.
  3. Gently toss everything together until the strawberries are well coated.
  4. Enjoy right away or let sit for about 30 minutes allowing the juices to release.
  5. Serve as desired — spooned over yogurt, cake, ice cream, or with some whipped cream or even enjoyed as-is.
