Method
- Add silken tofu, mixed berries, maple syrup, and vanilla extract to a blender. Blend until smooth and creamy.
- Add the nut butter and blend again until fully incorporated and velvety.
- Pour the mousse into individual ramekins or a larger container.
- Refrigerate for at least 2 hours (or overnight) to set and deepen the flavor.
- Serve chilled. Top with extra berries, a dollop of whipped cream, or crushed nuts if desired.
