They’re creamy, light and come together in no time with just a few simple ingredients. Great for a sweet craving, a weekend treat for kids or a quick dessert for friends. They are simple, fun and always a crowd pleaser.

You can customize tgem however you like. Mix and match cookies, yogurt flavor and even change the mixed in chocolate chips with nuts.

Ingredients You’ll Need

  • Digestive cookies (or any cookies you like)
  • Greek yogurt
  • Whipping cream
  • Icing sugar
  • Chocolate chips

  • Swap chocolate chips for crushed nuts.
  • Use flavored yogurt like strawberry or vanilla for a fruity twist.
  • Try different cookies, oatmeal, chocolate chip, or peanut butter cookies all work beautifully.
  • Drizzle melted chocolate, peanut butter or caramel on top before freezing for an indulgent touch.

Tips

  • Chill the cream mixture before assembling to make it easier to handle.
  • Use a icecream scoop or piping bag to neatly place the filling on cookies. Even a regular spoon works if that’s all you have on hand.
  • Customize sweetness, to your liking. Adjust the icing sugar amount depending on the sweetness of the yogurt you use or your preference. I don’t suggest using granulated sugar cause it will not melt well into the mixture, but a bit of honey or maple syrup will work well too.
  • Quick serving tip: let the frozen sandwiches sit at room temperature for about 10 minutes before eating for the perfect creamy texture. Right out of the freezer, the ice-cream sandwiches will be quite hard and not as enjoyable.

Ingredients
  

  • 8 digestive cookies or other cookies
  • 150 g Greek yogurt about ½ cup
  • 100 g whipping cream about ½ cup
  • 40 g icing sugar about ⅓ cup
  • 2 tbsp chocolate chips

Method
 

  1. Whip the cream with icing sugar until stiff peaks form.
  2. Gently fold in the Greek yogurt (or a high-fat yogurt that’s not too runny), vanilla, and chocolate chips. **Tip: Refrigerate the mixture for a bit before assembling the sandwiches—it makes handling easier.
  3. Scoop the mixture onto a cookie and top with another cookie.
  4. Place the sandwiches on a tray and freeze for 2–3 hours until firm.
  5. Let the ice cream sandwiches soften slightly at room temperature before enjoying.
