This Berry Tofu Mousse is the kind of recipe that makes you wonder how something so creamy and satisfying can be this easy. Made with silken tofu, nut butter, and naturally sweetened with maple syrup, it’s a dreamy blend of plant-based protein and fruity goodness. You just toss everything into a blender, chill, and scoop. That’s it!
Whether you’re looking for a quick dessert, a fun after-school snack, or even a high-protein breakfast that feels like a treat, this one checks all the boxes. The silken tofu gives it a smooth, pudding-like texture while the nut butter adds richness. And with a handful of berries in the mix, it’s fresh, light, and full of flavor.

Ingredients You’ll Need
(See full recipe below for exact amounts)
- Silken tofu
- Mixed berries (fresh or frozen)
- Maple syrup or honey
- Vanilla extract
- Peanut butter or almond butter

Tips
- Use silken tofu for the smoothest, creamiest texture—other types won’t blend the same.
- Taste and adjust sweetness after blending the berries, especially if they’re very ripe or tart.
- For a nut-free version, substitute the nut butter with sunflower seed butter or leave it out entirely for a lighter mousse.
- Chill for at least 2 hours to get the best texture—overnight is even better.
Storage
Store the mousse in an airtight container or covered ramekins in the fridge for up to 3–4 days. Not recommended for freezing as the texture may separate. You can portion it into small jars or ramekins for easy grab-and-go snacks or dessert cups.
Variations
- Make it nut-free: Use sunflower seed butter or tahini
- Go chocolatey: Add 1 tbsp cocoa powder for a chocolate berry twist
- Add crunch: Serve with crushed granola or roasted nuts on top
