Ingredients
  

  • 500 ml water
  • 2 tea bags black or green tea work well
  • 4 tbsp sugar
  • Zest of 1 lemon
  • Juice of 1 lemon
  • A few fresh mint leaves optional

Method
 

  1. In a saucepan, rub together the sugar and lemon zest until well combined and fragrant.
  2. Add water and stir the mixture.
  3. Bring the mixture to a boil, then simmer for a few minutes until the sugar is fully dissolved.
  4. Remove from heat and add the tea bags to the hot mixture, allowing them to steep for about 5 minutes.
  5. Remove the tea bags and, once the mixture has cooled down, stir in the freshly squeezed lemon juice.
  6. Refrigerate the mixture until completely chilled.
  7. Strain the chilled mixture to remove the lemon zest and residue.
